The sweet and sour tasting dragon fruit – pitahaya or pitaya – belongs to the cacti family. It owes its name dragon fruit to its pericarp of scale-like lobes reminiscent of a dragon's scales.
The pitaya has its intense pink color due to its high natural content of beta-carotene and betalain. In addition to these plant pigments and a high fiber content, the fruit has a variety of other nutrients to offer, including: B vitamins, vitamins C and E, iron, calcium and phosphorus.
